- 2 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano, crushed
- 1 teaspoon granulated garlic
- 2 lean pork tenderloins (about 1 1/2 pounds)
- Black Bean Salsa Ingredients:
- 1 (15-ounce can) black beans, drained
- 2 cups finely diced tomatoes, seeded
- 4 jalapenos, minced
- 1/4 cup finely diced purple onion
- 1 tablespoon olive oil
- 1 tablespoon Balsamic vinegar
- 1 tablespoon reserved spice mixture
- Juice of one lime
- 2 tablespoon chopped cilantro
- Instructions
Combine first five ingredients in a small bowl. Reserve 1 tablespoon for salsa that follows. Sprinkle spice mixture evenly over meat, pressing onto surface. Over medium heat, grill the meat for about 30 minutes or until a thermometer registers 160 degrees internal temperature. Let the meat sit for 10 minutes before cutting to let juices set. Slice pork on a diagonal bias into 1/2-inch slices. Serve with Black Bean Salsa and grilled marinated vegetables. Steps for Preparation Black Bean Salsa: Combine all of the ingredients in a medium bowl and let marinate at least 4 hours in the refrigerator. Stir occasionally. Spoon 1/2 cup of salsa onto center of plate. Slice pork loin on a diagonal against the grain into thin slices. Drizzle a prepared barbecue sauce around the salsa. Place at least 5 slices of pork loin on top of sauce around the salsa. Garnish with fresh cilantro and serve with grilled vegetables.
